Braised SWALLOW NEST with papaya in coconut milk
  • Add cubed papaya into 4 medium-sized bowls, about 1/2 cup papaya per bowl. Divide bird nest into 4 portions and add into the bowls on top of the papaya. Add filtered water to cover. Place a small plate on top of each bowl as a cover.

Transfer the bowls into a big skillet and add water until it reaches halfway up the bowls.

Cover the skillet and cook over medium high heat, until water reaches a boil and steam comes from the skillet. Turn to medium heat and let braise for 40 minutes.

SWALLOW NEST Strawberry Cream Cheese Mochi

Makes 14-16 mochis


For the mochi skin:

  • 200g fresh milk
  • 200g water
  • 140g glutinous rice flour
  • 60g white sugar
  • 12g of rice flour
  • 10g instant custard powder
  • 1 tbs Olive oil

  • 1 tsp (5 mL) Cooking oil 
  • 4 Egg whites 
  • 8 1/2 oz (245 g) SWALLOW NEST (Soaked in water for 6 hours at least, Pre Cooked)  8 Parsley leaves 
  • 3 cups (750 mL) Chicken stock 
  • 1/2 tsp (2.5 mL) Salt
  • 1/2 tsp (2.5 mL) Sugar 
  • 2 oz (60 g) Cornstarch
  • 1 oz (30 g) Minced, cured ham
